Recipe:
Cake-
Ingredients:
¾ cup salted butter, melted
1 cup + 2 tbsp sugar
3 eggs room temperature preferred
2 tsp vanilla extract
1¾ cups + 2 tbsp all-purpose flour
¾ cup ground fruity pebbles
3/4 tbsp baking powder
½ tsp salt
¼ cup + 2 tbsp yogurt
½ cup + 1 tbsp milk
Vanilla Buttercream Frosting:
5 sticks butter
6cups powdered sugar
4 ½ teaspoons vanilla
1 ½ teaspoon salt
¼ cup crushed fruity pebbles
Directions:
Cake: Preheat the oven to 350°F and grease and line with parchment paper three 8-inch pans. Whisk the flour, ground fruity pebbles, baking powder, and salt together in a medium bowl. Set aside. Whisk the melted butter and sugar in a large bowl. Add in the eggs and vanilla extract. Mix the milk and yogurt in a small bowl or liquid measuring cup. Beat the flour mixture into the butter mixture in 3 batches, alternating with the milk mixture, beginning and ending with flour, until just smooth. Divide the batter between the prepared pans. Bake until the cakes are lightly browned on top and the centers spring back when pressed, about 30 minutes. Let cakes cool for 15 minutes. Remove from pans and transfer to cooling racks and let cool 45 minutes to cool completely. Remove the parchment paper.
Frosting: Beat the butter until creamy. Add powdered sugar one cup at a time. Mix in vanilla extract and salt and beat the frosting on high until it whitens about 2 minutes. Take about 1 ½ cups of the frosting and mix the crushed fruity pebbles into it. Take a quarter of the remaining frosting and put it into a piping back with your biggest star tip. Mix 1-2 drops of food coloring into the frosting. Take a third of the remaining frosting and put it in the piping with the next biggest tip. Add 1-2 drops of food coloring to the frosting. Put half of it into the piping bag with the second smallest star tip. Add 1-2 drops of food coloring. Put it into the last piping bag. Starting from the bottom with the listed color pipe two rows then do the same thing with the rest of the colors. Once you get to to the top do the same thing but with the darkest color on the outside and the lightest in the middle.
Enjoy!
