I Mastered A Defying Gravity Cake


This colorful, sprinkled, gravity-defying cake is delicious and a real eye-catcher -the sprinkles look as if they’re pouring right onto the frosting! Wherever you take this confection, it will definitely be a conversation-piece. The cake is fun and perfect for birthdays and any celebration. By the way, this sweet gem can be made with either traditional sprinkles or with the more unusual, small, round disc-shaped ones -either makes a vivid and great-looking display for your next party!

Step 1: Prepare three to four eight inch cakes (flavor of your choice).

Step 2: Cool your cakes before frosting them for at least an hour.

Step 3: Place your first cake layer on a ten inch cardboard round.

Step 4: Spread your favorite frosting and continue with the rest of the layers without frosting the very top or the sides.



Step 5: Optional but helpful: place the filled cake in the freezer for 15-30 minutes to chill the frosting and the cake, which will make it easier to decorate.



Step 6: Completely frost the outside and the top of your cake; using a flat frosting spatula (offset spatula) and a rotating cake stand will give you a smooth finish on the sides and top, but you can also make this without, and have a more wavy finish.



Step 7: Take a wooden skewer and gently stick it into the very center of the cake, leaving about two inches on top.



Step 8: Take a plastic straw and bend the top. Spread white chocolate on it. Then roll the straw in rainbow sprinkles. Place the straw onto a sheet pan with parchment paper and freeze. Once the chocolate hardens, take the straw out of the freezer (about 15 minutes).



Step 9: Put the straw onto the skewer and make sure it’s on the two inches sticking out of the cake.



Step 10: Put sprinkles on the top of the cake to look as though they are pouring out of the bottle.



Step 11: Take an empty sprinkle bottle and put corn syrup or agave in it. Shake the bottle around so that the syrup is all spread out. Then put in some sprinkles and shake it some more.



Step 12: Place the sprinkle bottle on the tip of the straw.
