I Mastered a Cookie Mosaic Cake

If you’re looking for a cake recipe that is easy and simple and looks great try my cookie mosaic cake! This cake is made with one dough that is flavored three ways. It is decorated with mini cookies and chocolate covered pretzels. This cake is perfect for parties and gatherings.



Recipe-

Cake:

3 sticks butter, melted

1 1/2 cup brown sugar

3/4 cup granulated sugar

1 teaspoon vanilla extract

3 eggs

3 3/4 cups flour

2 teaspoons baking soda

1 teaspoon baking powder

1/4 cup white chocolate chips

3 tablespoons rainbow sprinkles

1/2 cup semisweet chocolate chips, divided

6 tablespoons cocoa powder

Vanilla Buttercream Frosting:

4 sticks butter

6 cups powdered sugar

1 tablespoon vanilla

1 teaspoon salt

Directions:

Cake:

Preheat the oven to 350° and grease and line with parchment paper three 6-inch cake pans.

Cream the butter and sugars together. Add the vanilla and eggs and combine. Mix the flour, baking soda, and baking powder in.

Divide the dough evenly into three bowls.

Mix the white chocolate chips and rainbow sprinkles into one of the bowls. Mix the cocoa powder and a 1/4 cup of semisweet chocolate chips into another bowl. Mix the last 1/4 cup of semisweet chocolate chips into the last bowl.

Save 3 tablespoons of each dough to make mini cookies to decorate. Put the remaining dough in the pans and bake for 20-25 minutes.

When the cakes are in the oven make the cookies. Take teaspoonfuls of the doughs and bake them for 7-10 minutes.

Frosting:

Beat the butter until creamy. Add powdered sugar one cup at a time. Mix in vanilla extract and salt and beat the frosting on high until it whitens about 2 minutes.

Decorating:

Step 1: Place your first cake layer on a ten inch cardboard round.

Step 2: Spread the buttercream and continue with the rest of the layers and then completely frost the outside and the top of your cake; using a flat frosting spatula (offset spatula) and a rotating cake stand will give you a smooth finish on the sides and top, but you can also make this without, and have a more wavy finish.

Step 3: Decorate the cake with the mini cookies and chocolate covered pretzels.
